1 cup flour
1 egg
1 tablespoon water
mix the dough, cover, and let rest more than 15 minutes
roll very thin, and cut in 2 inch squares
1 chicken, cut up
3 quarts water
boil for 1 hour, then remove the chicken from the broth
let it cool, bone it, and put the meat back in the broth
2 teaspoons salt
1/2 teaspoon pepper
about 1/4 teaspoon saffron, add enough to turn the broth yellow, but not bright yellow
1 tablespoon poultry seasoning
1 teaspoon dried celery leaves, pulverized
1 whole onion
add the seasonings
7 potatoes, peeled and sliced very thin
add the potatoes to the broth, and boil for 15 minutes
add the dough squares to the broth, a few at a time
boil for 10 or 15 more minutes
