Potatoes in Green Sauce

3 tablespoons olive oil
1 clove garlic, peeled
  fry the garlic clove until it is lightly browned
  remove the garlic, mash it, and reserve
1 tablespoon minced onion
  fry the onion until it is soft
4 medium all-purpose potatoes, peeled and cut in 1/8 inch slices
  fry the potato slices for a while
3/4 cup chicken broth or water
1/2 to 1 teaspoon salt
freshly ground pepper
3 tablespoons minced parsley
  combine the ingredients, including the reserved garlic, cover, and cook 10 minutes
  turn the potatoes, cover, and cook 10 more minutes, or until the potatoes are tender
